Milpero represents the next chapter of Chef Johnny Curiel’s deeply personal memoir, and another step toward fulfilling his life’s work of showcasing the beauty of Mexico. He’s proud to express the depth of his heritage with an 18-course tasting menu that stays true to Mexican tradition with deep respect for masa nixtamalized in-house. The experience starts in a dedicated antechamber with a welcome drink, and from there the evening unfolds as guests begin at the cold counter for raw specialties, move through the glass-enclosed wine and fermentation room, and conclude at the hot counter, where masa takes center stage. We proudly partner with the Masa Seed Foundation to grow all of our corn just southeast of Boulder as part of a pioneering ancestral Mexican corn project. Each fall harvest reflects our commitment to preserving heirloom varieties and honoring the cultural legacy of Mexican corn. Reservations for each month are released at 8am MT on the 1st of the preceding month.
